Eliolocanda's specialty: Frozen Eggplant Polpette made with spicy eggplant from Ukiha, Fukuoka
This is a home-cooked dish unique to Elio, made by boiling and mincing long eggplants from Ukiha, Fukuoka, mixing them with special salami paste "Nduja", pecorino cheese and herbs, and forming them into dumplings. After thawing, coat them in flour and fry them on both sides in a frying pan over low heat. It is also delicious.
Dumplings are made from minced eggplant from Matsuyama, Ehime prefecture, mixed with homemade salami paste "Nduja". A traditional home cooking from Southern Italy.
How to prepare: After thawing, coat with your favorite flour and fry in oil heated to about 180℃ for 3 minutes, or heat oil in a frying pan and cook on both sides for about 5 minutes over low heat.
